been Crazy!!!!

SO two of my guys quit last week! Nothing over anger or not wanting to work there but they quit none the less. That's why I ha vent had much time to write or update my blog. I just got a new book that my wonderful girlfriend gave me! Its called a day at el bulli. It is truly amazing! I have been reading it for about 3 days straight! Lots of pictures and a good amount of information, it just makes me want to go to the restaurant even more!

For those that don't know what El bulli is, it is the best restaurant in the world as voted by restaurant magazine ( which is highly regarded) and has the best chef Ferran Adria. His food is amazing! 2 million people ask for a reservation each year but only 8,000 people are accepted! (that's crazy!!!!)

OK off to work again!

today


I'm working on bacon and at my job in Seattle, I wish the economy was better. As I bet most of the world feels the same way. I feel bad for the next president.


Though I would put on a pic of something I did a long time ago (4 years or so)
It's: Seared U-10 scallop on a forbidden rice cake with a vanilla bean burre blanc.
Oh and for anyone who would like recipes for anything at ALL!!!! I would be happy to give you what you need.

Something new I found

Their is a Giant article in the NY times on food and how our next president will have to handle the food shortages! I'm not finished reading it, but I will be soon! Just wanted to pose a question? DO you think the food shortages will get worse or do you think we can stabilize our food economy?

A Long Day

Just worked a 12-14 hour shift (not really sure how long it really was) I am tired! Anyone else out there tired? I bet we all are as this week finally winds down. So I plated a wonderful dessert tasting to pair with some great ports from all over Portugal!

It was:
panna cota spoon
white wine poached pear with salted caramel
A Gorgonzola and Brie cheese platter
Gorgonzola stuffed black mission figs
Dark chocolate truffles

It went off without a hitch and everyone had a great time! OK this was a very short post just wanted to let you know that I am going to have a big blitz of post VERY soon.

Just a little history

So here's the reason for this blog.



I have been a chef for over 13 years, I love what I do and want to share my experiences, trials, thoughts, loves, hates, wonders and little tid bits of useful and useless information!



Lets start with a little history about myself, (just so everyone gets to know me a bit) I had a normal childhood growing up I wanted to be an astronaut or ninja or a professional wrestler! When I turned 14 and started high school I was like every other teenager trying to develop myself and find what I had a passion for. In short I started cooking, I learned under a great chef for 4 years and worked in a wonderful restaurant in California while I was attending high school. I also learned what competition in culinary arts was since I competed all the time winning my fair share of events.



Fast forward a bit and I find myself attending Johnson and Wales University where I received a degree in culinary arts.



Then I moved to New Mexico and started up the ladder of management, working on becoming an executive chef! I moved back to California, and now I reside in Seattle, WA. I am a chef at a "local" wine bar where we do small plates and have TONS!!!! of wine.



There's a brief description about me!



I LOVE COOKING and ENTERTAINING!!!! Part of this blog is for me to question things and hopefully I raise questions for whoever reads this. I would love to see comments and opinions on what I feel and write!



So I guess this is the first one down and lots more to go!
